Here's an easy way to make a classic breakfast "sandwich." Our Breakfast Pita Pockets are stuffed with two breakfast favorites: cheesy scrambled eggs and bacon! Everyone in your family is going to love these! 

What You'll Need

  • 8 slices bacon
  • 4 eggs
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1/2 cup shredded cheddar cheese
  • 4 (6-inch) pita breads, cut in half and warmed

What to Do

  1. In a large skillet over medium-high heat, cook bacon for 6 to 8 minutes or until crispy; drain on paper towel and cut each slice in half.
  2. In a medium bowl, combine eggs, water, salt and pepper; mix well. In a medium skillet, melt butter over medium heat; add egg mixture and scramble until firm. Remove skillet from heat and sprinkle cheese over eggs.
  3. Spoon eggs equally into each pita. Place four pieces of bacon into each pita. Serve immediately.

I had extreme difficultly with this recipe. If there are pictures with a recipe I try to make my dish look like the picture. First off I couldn't find 6 inch pitas in my store. The two sizes that I had when I measured were 5 or 7 inches. The picture looks like the large size so that is what I used. Next if you cut them in half you have 8 pockets. I only had enough bacon putting 4 pieces in each to cover 4 pockets (4x4=16 8x2=16). Next the picture shows what seems to be lot more than 1/2 an egg per pocket, so I doubled the eggs so you could have a whole egg per pocket. Also my pita breads kept breaking as I was trying to fill them, not your fault, the pita pockets I had were quite thin.
