Life gets busy and sometimes, that means we need quick breakfast ideas we can take on-the go. Well, it doesn't get much quicker than our Breakfast in a Mug recipe. You can make this in the microwave in less than 5 minutes. Wanna know the best part? You can grab the mug and go! No more excuses to skip the most important meal of the day. 

What You'll Need

  • 1/2 cup refrigerated or frozen shredded hash browns (thaw, if frozen)
  • 2 eggs, beaten
  • 1 tablespoon water
  • 1 frozen precooked turkey sausage link, cut into 1/2-inch chunks, thawed
  • 2 tablespoons shredded sharp cheddar cheese, divided

What to Do

  1. Coat a 12-ounce microwave-safe mug with cooking spray.
  2. Add hash browns and microwave on high 1 minute. Add eggs, water, sausage, and 1 tablespoon cheddar cheese; stir until well combined. 
  3. Microwave on high 60 seconds; stir.
  4. Sprinkle remaining cheese on top and continue to microwave 15 to 30 seconds longer or until eggs are set. Careful, this will be piping hot.

I think some people missed the point of this recipe. It does not say it is for 'on the go' so of course you would not eat it while driving. I suppose you could microwave it in a bowl, if that's what you prefer. It is hailed as being quick to prepare with easy clean up.

My son loves this. He is single and has limited kitchen access except for microwave and always looking for quick fix ideas. My Mom taught him how to scramble an egg in microwave. And this just made it better. Thank you for another happy family recipe : )

Great idea.... No pans. Quick and can be made healthy

You still would need to use a fork or spoon. Do you plan to eat it while driving to work?? I think the idea is ridiculous.

Because it is a breakfast on the go.

Because it has a handle and if you had time to sit and eat from a bowl why bother with this. da.......
