The sweet potato is the gem of the South, and this Southern-inspired potato salad starts with sweet potatoes and ends up as the star of the picnic line-up. Its certainly a refreshing change-of-pace potato salad for any time of year.

What You'll Need

  • 5 sweet potatoes (about 2 pounds), peeled and cut into 1-inch chunks
  • 1 cup mayonnaise
  • 1/4 cup honey
  • 1 tablespoon yellow mustard
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/4 teaspoon salt

What to Do

  1. Place potatoes in a large saucepan and add just enough water to cover. Bring to a boil over high heat and let boil 12 to 15 minutes, or until fork-tender; drain.
     
  2. In a large bowl, combine remaining ingredients; mix well. Add sweet potatoes and mix until well coated. Cover and chill for at least 2 hours before serving.

this sounds really good. Try yams instead of s potatoes. Better for diabetics.

This is also very nice with dates, pineapple, agave syrup and walnuts. It is an easy recipe to change according to your preferences. Enjoy!

I'll have to try it soon. But why walnuts? Pecans are so much more southern.

I had sweet potato salad in Pigeon Forge but it had pineapple & mini marshmallows in it Not walnuts
