Brown Sugar Snack Cake

We love recipes with shortcuts, especially when it means we spend less time in front of the stove, and more time enjoying great flavors. The secret ingredient in our Brown Sugar Snack Cake is biscuit mix! It adds a great, chewy texture--just like brownies! This will quickly become a favorite for the whole family!
What You'll Need
- 2 cups biscuit and baking mix
- 1 (16-ounce) package light brown sugar
- 4 eggs, lightly beaten
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1 cup flaked coconut
- 1 cup chopped pecans
What to Do
- Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
- In a large bowl, stir together biscuit mix and brown sugar. Add eggs and water; beat with a spoon until blended. Stir in vanilla, coconut, and pecans. Pour into baking dish.
- Bake 30 to 32 minutes or until a wooden toothpick inserted in center comes out clean. Cool in pan on a wire rack. Cut into squares to serve.

Can the flaked coconut be substituted (or omitted from recipe) with something else for people who are allergic to coconut??? I would love to try this......

You can leave out the coconut if you prefer or you can add chocolate chips if you prefer. Either way, it'll still be delicious - enjoy!

I made this today. I only had about 3 / 4 box of light brown sugar. I had to go to Walgreens to get 81 yr Dad cold medicines. We have about 6 inches of ice and snow for 3 dyas. Memphis drivers do not know how to drive in this. And Walgreens parking lot still covered with slick ice even by the door!! They did not carry Brown sugar, so I added a little of DARK brown sugar I had on hand. I sprayed the pan with Pam non-stick spray instead of greasing with Crisco shortening. NEST time I will grease with Crisco! It was yummy!!

I made this recipe this morning, and added instead of pecans (which I can't eat), chocolate chips. It made it a bit sweeter and maybe a little more moisture, with the melting of the chips. I was quite good, but hubby doesn't like the added chips, he's more of a "nut man" himself! LOL! Cooking time was a bit longer than this recipe, maybe because of the chocolate chips, since I had to add about 10 minutes more to it after the 30 minutes, then checked and the middle was too moist, set timer for 3.5 minutes, middle was still too moist, then did another 5 minutes and then again 2 minutes. Suggest the recipe specify the middle rack in the oven too. Otherwise, it is very chewy (the coconut makes it chewy) and sticky.

Hi there! Yes, the coconut can be optional. It gives the snack cake a chewy texture and adds a little flavor, but it will still work without it. Enjoy!

This reminds me of the old snack cake mixes you could buy. I imagine you could mix this right in the pan like the original snack cakes.

I use this recipe as a bisquick substitute Ingredients: 6 cups all-purpose flour 3 tablespoons baking powder 2 tablespoons powdered sugar 1 1/2 teaspoons table salt 3/4 teaspoon baking soda 9 tablespoons canola oil Directions: 1 Whisk dry ingredients together. Mix well. 2 Using an electric mixer, slowly stir in canola oil. 3 Mix until all lumps are gone and mixture is a uniform texture, about 1 minute. 4 Store in an airtight container.

While in high school a group of friends and I made a Bisquick coffeecake similar to this recipe. We accidentally used brown sugar instead of (granulated) white. Quite frankly, our version came out great! I see no reason why this wouldn't be just as tasty!

Have a laugh on me. I open a box of Bisquick. Boy did the flour different. It was different!! It was PANCAKE mix. In the exact color box!!! Why do they do that? So I went ahead and made it as it was all I had, adding some baking power, salt and butter to the mix. It was OK. But I am sure it would have been real good if I had had the right ingredients.

I found this info on the web. "1 pound of brown sugar = 3.13 unpacked cups OR 2.06 packed cups. So I guess that means use 2 CUPS PACKED BROWN SUGAR for this recipe? from http://www.gourmetsleuth.com

Used 1/2 cup mashed banana and added 1/2 cup extra baking mix;added cinnamon chips and raisins instead of coconut and1/2 cup chopped walnuts - turned out REALLY tasty

Measuring cups have 8 oz on it,use addition to get 16 oz.Leave coconut out,not adding anything in its place

You can make your own homemade biscuit mix. It's easy and cheaper than buying it. Just do a web search.

I have used the Splenda/Brown Sugar on Apple Crisp and it was really good. I think it would work in this as well. In fact, I intend to use it to make this as well. I just have to figure out what a bisquit mix is. Does that mean Bisquick? Or is there another biscuit mix?

I have made this several times. It is so easy and so very good. Always put in the coconut as well as the pecans. Great with a cup of coffee or glass of milk!
