What You'll Need

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 4 eggs
  • 1 (15-ounce) can pure pumpkin (not pie filling)
  • 1 1/2 cups sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract

What to Do

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a large bowl, combine flour, salt, baking powder, baking soda, cinnamon, and nutmeg; mix well and set aside.
  3. In another large bowl, beat together remaining ingredients. Gradually add flour mixture to pumpkin mixture; beat well then pour batter into baking dish.
  4. Bake 30 to 35 minutes or until a toothpick inserted in center comes out clean. Let cool completely then cut into squares.

Does anyone know the nutritional value/calories per serving for this recipe?

Love Pumpkin skip the nutmeg and add 1/2 tsp ginger and 1/4 tsp cloves much better spice combination ... tastes better ... good recipe!
