What's the shortcut to our mini Chicken Potpie crocks? A homey layer of mashed potatoes takes the place of traditional potpie crust to add novelty and comfort to every bite.

What You'll Need

  • 2 cups cooked chicken chunks
  • 1 1/2 cups mixed vegetables
  • 1 (12-ounce) jar chicken gravy
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups mashed potatoes
  • Paprika for sprinkling

What to Do

  1. Preheat oven to 375 degrees F. Coat 6 mini ramekins (or mini souffle dishes) with cooking spray.

  2. In a large bowl, combine all ingredients except mashed potatoes; mix well. Spoon mixture evenly into prepared ramekins half to three-quarters full.

  3. Spread mashed potatoes over chicken mixture, distributing evenly. Sprinkle with paprika and place on a rimmed baking sheet.

  4. Bake uncovered 25 to 30 minutes, or until heated through. Serve immediately.

Notes

Let's see! We've got chicken, veggies, and potatoes here so all that seems to be missing is dessert! Why not try topping off this meal with a plate of chocolate chip cookies -- Mmmm!

Mixed vegetables, are these raw fresh, cooked fresh or frozen? Can this be frozen? This one I have to try, hubby will love it!!! Thank you!

Hi there! You can certainly use frozen vegetables, so long as you thaw them first. You can also use canned mixed vegetables (drained) if you prefer. We hope you and your hubby enjoy this dish! :)

can you use fresh vegetables instead of frozen?

Any thoughts on making up several in the ramekins and then freezing/thawing 2 at a time?

Just made this for dinner tonight. Yummy! Couple suggestions: you won't need that 1/4 tsp. salt. There is enough in the chicken gravy. The onion powder and pepper give it just enough zip. I also added some fresh chopped mushrooms. Will make this again.

I saw this beng made on TV today. I was so happy to see it. I had bought mini casserole dishes several months ago. My plan was to make chicken/turkey potpies. I am definately going to make some. YUMMY'

ready to try this...its simple and takes hardly no time to prepare....going to try turkey ,too'

quick & easy, perfect for Thanksgiving leftovers will probably put dressing/stuffing under potatoes

Sounds good for left over turkey and dressing. Will try it too and use turkey gravy mixed in with the turkey & dressing/ then top with mash potatoes.

I LIKE THIS RECIPE, HOWEVER SINCE I DON'T HAVE ANY MINI RAMEKINS, I'M GOING TO BAKE IT IN A LARGER DISH. AND YES, MRLYLVS2COOK, IT IS ALMOST THE SAME AS SHEPPARD'S PIE, ONLY WE ARE USING CHICKEN INSTEAD OF GROUND BEEF.

Can't wait to try this! Perfect for empty-nesters. Thanks.

i think of these as chicken "sheppard's pies". they're topped with mashed potatoes, instead of pie crust.

Herb Crusted Lamb with Mint Sauce

Instead of cooking ham or prime rib for Easter, why not try something new this year? Our Herb-Crusted Lamb with Mint Sauce may look and sound fancy, but it's really easy to do. It's basically a rack of lamb that's coated with herbs and spices before it's roasted to perfection. Just before serving, it's finished off with a mint-wine reduction. The end result is an Easter-worthy main dish that'll impress everyone at the table.
