Cauliflower & Broccoli Salad

When summertime comes around, you're looking for something fresh and new; a break from those traditional deli salads you had so much of at church potlucks. Try this Cauliflower & Broccoli Salad! With the sweet burst of cranberry, and the crunch of crispy bacon, this broccoli salad is just what summer needs.
What You'll Need
- 3/4 cup mayonnaise
- 3 tablespoons apple cider vinegar
- 4 bacon slices, cooked crispy and crumbled
- 2 cups fresh cauliflower florets, blanched (see Tip)
- 2 cups fresh broccoli florets, blanched (see Tip)
- 1/4 cup slivered red onion
- 3/4 cup salted cashew halves, coarsely chopped
- 3/4 cup dried cranberries
What to Do
- In a small bowl, whisk mayonnaise and vinegar; set aside.
- In a large bowl, combine remaining ingredients. Toss with mayonnaise mixture until evenly coated.
- Cover and chill at least 1 hour before serving.

- Test Kitchen Tip: To blanch the cauliflower and broccoli, place florets in a pot of boiling water and let them simmer 1 minute; drain immediately. Place them in a bowl of ice water to stop them from cooking. Drain well and they’re ready to use. Or if you’re short on time, feel free to start with frozen cauliflower and broccoli florets. Just make sure you thaw and drain them first.

Not sure where my comment disappeared so just doing it again in case it did not show up this is good I do it different though by leaving out the cranberries my son is allergic to cranberries real bad. I add raisins instead. and add extra bacon to this one it is a keep and they family likes it. you can just leave out the raisin or cranberries and it is still good. add cheese cubes also to this and that is good also

Thank you, but these aren't frozen. They're in the fresh produce section (Walmart, Publix) already washed and packaged in steam-in bags, ready to eat. I never steam them, I just open the bag and use them or dip.

Quick question. Do we need to blanch the broccoli cauliflower that come in steam-in bags from the produce dept.? Thank you.

Veggies are blanched before they are packaged and frozen, so you just need to thaw them. I always use frozen for these types of recipes no chopping and no waste! Cheaper than fresh as well.

I am so glad I found this recipe recently. We are having somewhat of a heatwave here where I live and and I thought a cool salad would be perfect, so I made it today for lunch. I omitted the bacon and added the salt as recommended from my previous question. I also used a low fat Miracle Whip (Balance) instead of mayonnaise to keep the fat amount a little down. This salad was really delicious and fresh. All the ingredients harmonized well together, the vegetables were perfectly crisp and it was so filling, too. This recipe is definitely a keeper and I know I will make it more often in the future.

I am so making this one day this summer! I love this combination of ingredients... except I am vegetarian and was wondering if it is possible to leave out the bacon and still have a good flavor?
