Farm Style Potatoes

We always hear about good old hearty farm-style meals. Well, now we can all look forward to coming home to these!

What You'll Need

  • 5 potatoes (about 2 pounds), peeled and quartered
  • 1/4 cup olive oil
  • 2 garlic cloves, finely minced
  • 1 (15 ounce) can crushed tomatoes
  • 1 cup pitted ripe olives, halved
  • 1/2 cup loosely-packed basil leaves, coarsely chopped, or 1 heaping tablespoon dried basil
  • 1/4 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon sugar
  • 1/2 cup chicken broth
  • 1 (14 ½ ounce) can whole tomatoes, drained and coarsely broken

What to Do

  1. In a large saucepan, cook potatoes in boiling salted water until tender; drain.
     
  2. Meanwhile, in a large skillet, heat olive oil over medium heat; add garlic and saute about 1 minute, or until light golden. Add crushed tomatoes, olives, basil, salt, and pepper; cook about 2 minutes, stirring occasionally. Add sugar, chicken broth, and broken tomatoes and cook 2 minutes, stirring occasionally.
     
  3. Spoon sauce over cooked potatoes. Serve immediately or keep warm in a 250 degrees F. oven until ready to use.
     

Notes

This sauce is great served over cooked rice or pasta, too.

I think the "farm style" in the recipe refers to the hardiness of the recipe. What difference does the name makes if the recipe tastes good?

I don't think that person was saying it wasn't good. I think they had a valid point about the olives. I remember one time I was looking online for a recipe and one of the reviews actually said "I thought this recipe sounded great until I looked at your picture. It doesn't make it look appetizing and so I guess I'll skip it," or something along those lines. My thought was 'Really? You read it over and thought it tasted yummy but because the author wasn't a professional photographer you didn't even want to try it?!' Now that was bad and I am always saddened by the rudeness of folks like that.

Ripe olives are black.

Looks good ... but what farm had olives available to them in the U. S.? Farm style, to me, doesn't suit this recipe as a name.

I agree. I was expecting something with peppers and onions but definitely NOT olives. lol! Not saying it doesn't taste good like someone said. I think it would be great! Just the title needs fixing. Maybe something like Italian or Greek Style Farm Potatoes. =)
