Crispy Asparagus

Crispy Asparagus

Crispy Asparagus is a dish that works just as well alongside a juicy dinner steak as it does for a brunch or light lunch. This fresh veggie side dish is sure to become a regular on your menus.

What You'll Need

  • 1 pound asparagus, trimmed
  • 1 egg
  • 1 tablespoon milk
  • 1 cup Italian-flavored bread crumbs
  • 1/2 cup olive oil
  • Parmesan cheese (optional)

What to Do

  1. In a deep skillet, heat 1 inch water over high heat until boiling. Add the asparagus and cook until crisp-tender; drain.
     
  2. In a shallow dish, beat the egg and milk until well combined. Place bread crumbs in another shallow dish.
     
  3. In a skillet, heat olive oil over medium-high heat until hot. Dip asparagus in egg mixture then into bread crumbs, coating completely. Sauté asparagus in hot oil until golden. Drain on a paper towel-lined plate and serve immediately.

Note

Sprinkle with grated Parmesan cheese just before serving, if you'd like.

To keep the coating on, dip in flour first, then egg, then crumbs

Hey--to Too Many Dishes to Wash--Use the same skillet for step 1 and step 3 (water in step 1 hardly makes a skillet unusable for frying in step 3. In step 2 put the crumbs on a paper plate. OK, so you have a bowl dirty from the egg. Oh, well.) Anyway, this recipe is VERY tasty. My only problem was getting the crumbs to adhere to the asparagus. My asparagus had very little coating left on. Any suggestions, all you cookers??? I only used about 1/2 of the oil that was suggested--perhaps that was the problem??? I gave this recipe 4 stars (did not downgrade it because I screwed it up). Will definitely make this again, until I get it right, because the flavor and texture of the veggie was excellent.

Lovely recipe & probably delicious. Too many dishes to wash.
