Your Family's Favorite Meatloaf

Say hello to Your Family's Favorite Meatloaf recipe! Unlike other meatloaves that are sort of dry and tasteless, this one is super juicy and packed with flavor inside and out. And the combo of the bacon and the glaze makes this truly irresistible.
What You'll Need
- 2 pounds ground chuck
- 1 1/2 cups finely crushed butter-flavored crackers
- 1/2 cup chopped onion
- 3/4 cup ketchup, divided
- 2 eggs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 slices bacon
- 1 tablespoon prepared yellow mustard
- 2 tablespoons brown sugar
What to Do
- Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
- In a large bowl, combine beef, cracker crumbs, onion, 1/2 cup ketchup, the eggs, salt, and pepper; mix well. Form meat mixture into a loaf on baking sheet. Lay bacon over top of meatloaf.
- Bake 1 hour.
- Meanwhile, in a small bowl, combine mustard, brown sugar, and remaining 1/4 cup ketchup; mix well. Spread evenly over top of meatloaf. Return to oven and bake 15 more minutes, or until no longer pink in center.

I have found that in nearly 50 years of cooking that a 1 pound meat loaf at 350 degrees for one hour will NEVER be done inside. You'll always have pink (raw). I always make sure that the meat is (nearly) room temperature and I bake at 375. I've never had a problem since I changed to a hotter oven. This particular recipe - 2 pounds at one hour fifteen. It's not gonna be done, for sure.

I haven't made this recipe yet, but I will, it sounds good. What I've been doing with meatloaf recipes is putting the meatloaf on a double thickness of aluminum foil and grilling over indirect heat. Turns out great! I will do that with this recipe. I saved this in my recipe box.

The recipe was on the Quaker Oats carton and it was a good one too. BTW, how do you give a lower rating only because you haven't tried a recipe? There is an option to check that you have not yet made it if you feel you need to comment.

Great recipe!!! Sometimes I change the toppingto BBQ sauce . I also have a small rack to fit pan and drin the grease if any

Four stars only because I've yet to try this version of a family favorite. The addition of bacon is sure to earn it a 5 star rating! Now I know what's for dinner tonight. As always another simple but delicious recipe using ingredients I almost always have on hand! The addition of the crushed buttery crackers sounds great, too. Do any readers recall the 'old days' when meatloaf was made with uncooked oats?

I remember my mom using oats. I've used them a few times too in a pinch. I think my mom even used Saltines. I could be thinking of something else though...

We love meatloaf and always willing to try a new recipe. This one has all the elements to make is extra special. I have used the glaze before but not with the addition of the bacon. Also, the onion is good but we prefer to grate it instead of chopping. You get all the flavor but not the crunch.
