Loaded BBQ Baked Potato Casserole

We've combined two American favorites into one casserole that'll be your family's new favorite dish. Our Loaded BBQ Baked Potato Casserole is a family favorite one, because it's absolutely delicious, and two, because the recipe is filled with easy shortcuts that save time but don't skimp on flavor! What You'll Need
- 1 (24-ounce) package refrigerated mashed potatoes
- 2 cups (8 ounces) shredded sharp Cheddar cheese, divided
- 1 cup (4 ounces) shredded Monterey Jack cheese with peppers
- 1/2 (8-ounce) package cream cheese, cut into cubes
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup sour cream
- 2 cooked chicken breasts, shredded
- 1/2 cup barbecue sauce
- 6 slices precooked bacon, crumbled
What to Do
- Preheat oven to 375 degrees F. Coat a 7- x 11-inch baking dish with cooking spray.
- In a large microwaveable bowl, stir together mashed potatoes, 1 cup Cheddar cheese, the Monterey Jack cheese, cream cheese, salt, and pepper. Cover and microwave on HIGH 4 minutes. Stir in sour cream.
- Spoon potato mixture into prepared baking dish. Arrange chicken evenly over potatoes, drizzle with barbecue sauce, sprinkle evenly with bacon, and the remaining Cheddar cheese.
- Bake 15 minutes, or until casserole is thoroughly heated and cheese is melted.

Made this for dinner and while very good I adjusted the leftovers by adding chopped onion . Also extra salt and pepper to bring out flavors. We loved the leftovers. I will also be using sharp white cheddar cheese and Homemade mashed potatoes. For a firmer potato base.

Using packaged pre shredded cheese then 8 OZ = 2 cups. Read the package.

in response to dheaton regarding the cheese amounts, 3 cups is actually 12 oz., not 24, that would equal 6 cups

I thought that this recipe sounded great until I got to the BBQ sauce... Do I really need it? Does the chicken really add that much?

I was originally with you...until I tried it. It is not imperative that you use it, but boy, is it good with it! You might want to try ranch dressing as a substitute if you don't like bbq sauce.

In regards to the cheddar cheese, 3 cups to my knowledge would be 24 ounces not 12 ounces. The 3 cups might prove to be a bit much. I used 1 1/2 cups (12 ounces) of the cheese and substitued shredded smoked pork shoulder instead of the chicken. It was definitely a hit with the troops.

It is a flavor of the instant Idahoan potatoes that she mentioned in the sentence before that one. "I used instant packaged Idahoan potatoes. I used a package of roasted garlic and a package of loaded baked potato."

This is a specific brand of instant mashed potatoes that are really good and sell for about 1.00 per pkg. They have many different flavors loaded baked. is just one of them. I don't much care for the loaded baked as they use artificial bacon bits but the other flavors are really good especially the "baby reds" and baby reds with garlic and parmeasan cheese

I have read this recipe 3 times and do not see anything about a package of loaded baked potatoes it says refrigerated potatoes.

The recipe calls for refrigerated mashed potatoes, not instant mashed potatoes.

I made this with a few substitutions and it was a big hit. Hubby had thirds! I used instant packaged Idahoan potatoes. I used a package of roasted garlic and a package of loaded baked potato. Also I substitued mozarella and provolone cheese for the monterey jack w/peppers. Instead of chicken and bbq sauce I used a tub of Lloyd's Bbq Beef and I topped the cheddar cheese with sliced black olives and French's fried onions. Also, I sprayed the baking dish with butter flavored cooking spray so the potatoes soaked that up. I loved that this was fast, easy, and good. I used regular cream cheese but I bet this would be good with the new Philly cooking cremes too.

I made these potatoes, but found that using the already made potatoes, made this dish toooo mushy. The potatoes were quite tasty, but would next time, make my own potatoes, but not so wet. All the cheese in this dish makes these potatoes tooo soupy, otherwise delicious.

Does anyone know how many calories are in this and most of all how many carbs per serving? I have Type 2 Diabetes so I have to limit my carbs. Thanks!!

This is absolutely delicious! I didn't have the Jack cheese with peppers, but I did have regular Monterray Jack, so used that and just added some diced green chiles into the potatoes to make up for the peppers missing in the cheese. Also added some sliced green onion on the top! Excellent. I made this to use up some leftover mashed po's, but in the future, I am going to substitute my "mock mashed potatoes" made with cauliflower, as we tend to watch our carbs. When I do, I will add an egg to the cauliflower puree so it will set up a bit more. Can't wait to make this again!

UPDATE: Since my original review, I have made this with the "mock" mashed potatoes (cauliflower) and it is AWESOME! I have solved the problem with the runniness in the original recipe. I cut back on the cheese and omit the sour cream. You don't even miss it. Love this recipe; it is a regular at our house!
