What You'll Need

  • 24 wooden skewers
  • 1 pound boneless, skinless chicken breast, cut into 24 strips
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon butter
  • 1 teaspoon crushed red pepper

What to Do

  1. Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray. Soak skewers in water 15 to 20 minutes.
  2. Thread chicken onto skewers and place on baking sheet.
  3. In a small saucepan over low heat, combine remaining ingredients and heat until melted and smooth, stirring occasionally. Brush evenly over chicken skewers, completely coating them.
  4. Bake 8 to 10 minutes or until no pink remains.

This was so easy to make and incredibly delicious!

You can substitute, but the flavor won't quite be the same. Sesame oil is the secret ingredient to make Asian food taste like restaurant food. A small bottle will last for years stored in a dark cupboard because you can split it with EVOO or vegetable oil. I hope this answers your questions.

I only keep Wesson oil and EVOO on hand. Can I sub either in the recipe. I have regular soy sauce and teriyaki sauce on hand but usually use teriyaki as it is less salty. Comments please!!
