Curried Chicken Salad

Your chicken salad lovers will rave about the novel taste the bit of curry and lemon juice add to our easy recipe for Curried Chicken Salad. Talk about making something simple into something special.
What You'll Need
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon lemon juice
- 1 teaspoon curry powder
- 1 teaspoon salt
- 6 cups chunked cooked chicken (see Note)
- 1/2 cup pecans, coarsely chopped
What to Do
- In a large bowl, combine mayonnaise, sour cream, lemon juice, curry powder, and salt; mix well. Add chicken and pecans, and mix until thoroughly coated.
- Cover and chill for at least 2 hours before serving.
NOTE: When you're grilling boneless, skinless chicken breasts, why not grill extra so you'll have them for this salad? The grilled flavor gives this salad extra umph, but you can cook the chicken any way you like.

I use a light curry powder from Penzy's and it's great for us "beginners." lol I've recently learned about acids in cooking, like limes, lemons, and vinegars, and wow, do they boost the flavor! The lemon in this recipe definitely makes this salad shine!

I love to make chicken salad from rotisserie cooked chicken. The flavor is wonderful, and the chicken is usualy so tender I find I'm able to make use of alot of the bird. I just add some mayo, fresh rosemary, halved red seedless grapes, salt and pepper, and that makes an incredible chicken salad!

You can lighten up this recipe by substituting plain or lowfat vanilla yogurt for the sour cream. Also, try adding grated carrot, raisins and a dash of cumin powder.
