Nothing beats a homemade deli-style potato salad, and nothing compares to our Seven Layer Potato Salad! With layer after layer of colors, textures, and flavors, this one will be the talk of your picnic or grill-fest!

What You'll Need

  • 2 pounds red skinned potatoes, quartered
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 hard-boiled eggs, chopped
  • 3 celery stalks, chopped
  • 1/2 cup shredded Cheddar cheese
  • 2 scallions, sliced
  • 1/4 cup bacon bits

What to Do

  1. Place potatoes in a soup pot and add enough water to cover. Bring to a boil over high heat and cook 15 to 20 minutes, or until potatoes are fork-tender; drain and let cool. Place in a large bowl.
  2. To make the dressing, in a small bowl, combine mayonnaise, sour cream, garlic powder, salt, and pepper; mix well. Add half the dressing to the potatoes and toss gently. Layer with eggs, celery, cheese, scallions, and bacon bits. Pour remaining dressing over salad. Refrigerate until ready to serve.

I can't eat raw onions, but I can eat cooked onions (go figure) ... so ... I saute diced onions in butter and added them to the potatoes while they were still hot. My hubby doesn't like garlic, so I used celery salt. So everyone would dig to the bottom of the dish, I layered everything in a 9" x 13" glass baking dish. I made the dressing the day before and placed it in a sealed container overnight with 1/8 cup cooked chopped smoked bacon to allow all the flavors to blend. The day of the get-together I cooked the potatoes and boiled eggs. I served the 7 Layer potato salad hot and garnished with tiny cherry tomatoes. Thank-you for your basic 7 layer potato salad recipe ... it turned out great!

AH HA! I have been looking for a different recipe to make for my fourth great grand child's baby shower. Sounds soooo refreshing and cool. ( BTW this one is our third boy.)I hope he is a red head!!!!!

This was a HUGE hit at my church picnic 6/16/16! Every bit was eaten!!! I did use real bacon (and cut it into bigger chunks rather than use bacon bits.) I served it in a pretty glass bowl, but also tucked a sign on a skewer in it reminding people to "dig to the bottom of the bowl" otherwise, I was afraid they would just be spooning the other 6 layers of goodies onto their plates. I dolloped the remainder of the dressing in the center of the salad as shown in the picture and sprinkled a few bacon pieces and green onion on top.

I like the idea of layering a potato salad! I've been searching for a potato salad recipe that I can call my own and make it the same everytime so there's no unfortunately surprise outcomes! lol I always thin the may with a little water, though, as it makes a creamier dressing and doesn't glop up after it's chilled.

I, too, like a creamier mayo and thin mine with a little sweet pickle juice. It just adds a little sweetness without a lot of pickle flavor.

The bacon bits and hard-boiled eggs are really selling me on this recipe!

How do you serve this? Do you mix in the additional dressing when you're ready to serve? Or do you take a little of it when you take some out?

Hi there! Mix half of the dressing with the potatoes, then layer the remaining ingredients and pour the rest of the dressing over them. When it's time to serve, just spoon out. There is plenty of dressing to coat everything! Enjoy!

Made this for a family gathering on the 4th of July, was a BIG hit! This will be a must at all the family gatherings in the future.
